“aaah looks so pretty” she says and indeed it does! Some lovely chocolate for those of us who love chocolate. I think it’s a beautiful chocolate layout. Now, we love chocolate so we are going to be talking about chocolate tea and i’m going to show you how to make some but before I do that the reason why Kendall Jenner tweeted that photograph was because she was helping to launch a new brassiere that’s just opened in new york city called Sugar factory, so if you are in new york, head on down and let me know how it goes, leave a comment in the comment box below ok?

So moving on, coming back to lovely London, I’m going to show you how to make some chocolate tea…

We’re at the cooker, I have some La Signorina Chocolate, this is dark chocolate you can use your favourite dark chocolate bar. We’re using “our favourite” which is the one that we make her. So we are just going to put a little bit of that and a little bit of milk, we’re going to melt this down. It’s okay, I know that our chocolate bar has hints of white chocolate in there, that’s absolutely fine it’s all chocolate, we’re going to mix this, melt this slowly, make sure you melt this on a low setting, it will start to melt quite quickly, you don’t really need a lot of milk for this but it’s entirely up to you. So once that’s melted, I like to add our tea that we have brewed, regular tea is fine. I’m just going to pour that in, whoops! sorry for the mess, i’m just waaay too excited to have some chocolate tea. Another tea that would be really good for this would be Early Grey Tea, it’s got a distinctive flavour of bergamot and it adds a slightly citrus tang to it so if you like a citrusy type of chocolate tea then I would recommend using Earl Grey Tea. If not, then regular breakfast tea is fine.

So we have the lovely Chocolate Tea over here, you can add a bit of extra sugar, i’m going to have mine plain. It’s creamy and soothing. There is nothing like a cup of tea. How to Store Chocolate

Happy Father’s Day to all you wonderful men out there! I will be remembering my papa today as it has been a year since he suddenly passed away and I will reflect on all the good times to keep me going. Also would like us women to acknowledge all the men in our lives today and how they have helped shape our paths, directly or indirectly. I would also like to reach out to women who are particularly feeling burnt out or extremely hurt by a man in your life that may have disappointed you. Please don’t let that taint your heart and close yourself to all the good men out there. There are still some whether you believe it or not… just don’t harden your heart and learn to weed out the good ones from the bad ones. It is hard to find a good father figure these days, especially as we women don’t seem to be given enough respect in their eyes. But we can change that. We just all need to continue to remain strong, carry ourselves with dignity and the right man will come along and run that path beside us. (When the queen is ready, the king will appear) so get ready. Let’s shine as women, acknowledge those awesome father figures in our lives. And if you can’t find one, get one. One that is a shining example of the father you have always wanted! Well hello what are you doing in my fridge? Well you asked me a question, so i’m here to answer, how do I Store chocolate? Do I store them in the fridge, what do I do with them? Yes, you can store chocolate in the fridge but it is best savoured at room temperature. So if you are living in a warmer climate then yes by all means store them in the fridge, anything between 13 and 20 degrees celcius is ideal for storing chocolates. If you have a wine refrigerator that’s perfect for storing chocolates as well. Ideally, store them in the original packaging. If you can’t do that for whatever reason, then a plastic container will do just make sure that it is not a cheap one, layer it with some kitchen paper, when you are ready to eat them just bring the entire container out into room temperature before you open it so there is no condensation on your chocolates.So I hope that as answered your questions, until next time in the next video. I will answer your question, yes and no. White Chocolate as opposed to your dark and your milk, doesn’t contain cocoa solids. Your cocoa solids is what makes your chocolate have that brown colour. So technically, it does come from the same plant and it’s processed exactly the same way except that it doesn’t have cocoa solids,so what is left now is your cocoa butter. So white chocolate is made from cocoa butter.

Out of all three, it’s the least healthy because it’s just got cocoa butter and no cocoa solids. Your cocoa solids is really what brings all those health benefits that you hear so much about when people talk about healthy chocolates. So out of all the three, your dark chocolate is your healthiest. Now white chocolate is still quite healthy compared to other butters and oils, reason being that is melts at body temperature so it does not clog up your arteries like regular butters and margarine will do.

So having said that, I do love my white chocolate and i’m actually savoring the moment for me to open this white chocolate bar but this specific one is a special one that we made just for you here at La Signorina. Well hello it’s so great to see you. I hope you are enjoying my pink ensemble today. I am going to be talking to you about why we need to temper chocolate because a few of you have been asking me why do we need to temper chocolate? There are lots of reasons and so if you do decide to work with untempered chocolate then you’ve probably experienced one or all of these examples that i’m going to give to you.

So once you have melted your chocolate down, it’s really warm, there are no chocolate crystals left, it’s completely untempered, your chocolate has been thrown out of temper, Now if you decide to pour that straight into your moulds, you put it in the fridge or freezer and they look beautiful, you try and get them out and they don’t come out. That’s one of the main reasons why you don’t want to work with untempered chocolate because it’s still gooey and soft and just doesn’t crystallize the way it should.  Now if you are lucky because you have popped it into the freezer so it’s solid and you are able to actually get it out, The next problem you are going to face is once it comes to room temperature, it’s going to melt and that’s all your hard work gone to waste. So as soon as someone picks it up and puts it in their hands, it’s going to start melting very very quickly. Even before someone touches it, it probably is already starting to melt. It will cause condensation so your chocolate will start to sweat which will eventually cause fat bloom so you are going to get white streaks across your chocolate, you’ve probably seen that when you have left your chocolates out in a hot area and it’s cooled down again so you get those streaks. I will leave some photos:

These are examples of untempered chocolate with the grey streaks across. Now when you try to break it, it’s very crumbly, it’s bendy, it’s soft, there is no snap!

It’s the worst experience, eating chocolate without having a snap (I love to hear the snap) I’m sure you do too. So yes, you want to work with tempered chocolate so you hear that snap, it’s got that shine and it’s not grainy as well when you taste it. So untempered chocolate is going to taste very grainy and it’s going to be a very inferior experience to what I would love you to experience. I’m sure you would like your friends and your family or whoever is tasting your chocolate creations to enjoy them as well.
