Chocolate Decoration and Art

Hello, welcome to this video, today I’m going to show you how to make chocolate decorations using some cookie cutters and these will be perfect with your desserts.So if you come over here, we have some butterflies. I absolutely love these butterflies they are so cute, some stars, some heart shapes, ginger bread men…

The list goes on and on depending on how many cookie cutter shapes you have. I believe this is going to be really popular with the kids, perfect to add to your deserts as a little decorative thing. So come along to my workstation and I can show you how I can make these and you can make these too from home.

Welcome to the workstation, we just have our marble slab you can use a granite slab as well, our acetate sheet, some tempered chocolate in a bowl. Ladle a generous amount of chocolate, we need to work quite quickly here. Pour a generous helping and then spread it with my spatula. Don’t be afraid to go out of the edges you just want it spread as evenly as possible across your sheet, you want to be generous with the edges. So we’ve pretty much covered it. Lift off the sides, give it a bit of a shake so it’s nice and smooth and leave that to set.

Okay so as our chocolate now begins to set, we are going to use some biscuit cutters and press in, little butterflies here, I think these are supposed to be ginger bread men (giggles) no idea who they are. Now this is the reason why you need to work quickly because they’ve already started to come off. Heart shapes, some circles, and so if your chocolate sets, just pull it out of the cutter and it will be fine. Squares, it’s quite hard already but just to help with the cooling down process we are just going to pop this in the fridge for a few minutes.

Here is our chocolate now brought out from the fridge that’s been set, It looks like a little jigsaw puzzle it’s quite cute. Now we are just going to break off our chocolate pieces from the acetate sheet and look at our lovely it is, the star that we have, set the aside, let’s pull out our butterflies, how cute are these? absolutely gorgeous. It will look absolutely perfect with your ice creams.

How to Make Chocolates: The Tools

Hello and welcome to this video, I’m going to show you some important and useful tools that you need to have in the kitchen when making chocolate. So here is introducing to you the dosage funnel and holder, transfer sheets, pvc or acetate sheets, Dipping forks – these are very very useful when dipping chocolate centers inside your chocolate and you don’t want them to get lost, some baking paper or parchment paper, you want to get a silicon coated, non stick type. I picked this up from Tesco so there is no excuse for you not to find one here in the UK. Thermometer, I love this, this is an infrared thermometer, it’s great ’cause you don’t have to dip it in the chocolate to get a reading so it keeps it nice and clean.You are going to need some spatulas, this specific spatula I love because it has a metal probe that runs all the way down to the bottom so that when you are mixing and tempering your chocolate, you actually get a reading of the temperature on the screen right here.Offset spatulas, something to grate your chocolate with and some cookie cutters, you can get various shapes and sizes, pallet knives or bench scrapers, very very useful. You definately need an accurate kitchen scale so do invest in one. Finally, last and definately not least, you need to get some chocolate moulds. Now there are two types. I love this one, it’s the one I use it’s called a polycarbonate chocolate mould.  It’s very durable, it’s what professional chocolatiers use. It’s quite pricey and expensive but it’s worth it because it would last you a long time.  Otherwise you can pick these ones from ebay, they are alot cheaper. They are very light and alot easier to damage but if you are just starting out in chocolate making then you can go for these ones because they are alot cheaper and you can find them on ebay. Chocolate wedding favours

This week was spent creating chocolates for clients which was pretty darn good. Here are some photos of some Chocolates I made for a wedding client. I had to keep slapping my boyfriend’s greedy fingers because he kept wanting to eat them. When I finally let him have one, he said that they were “amazing and tasted really reeaaaaally good!” he made me blush. I don’t always get that reaction from him as he does taste a lot of my chocolate experiments.

Hopefully the blushing bride who gets these will get even more amazing compliments thrown her way for treating her guests to such delightful mouthwatering, chocolate favours. They were a real treat to make for her!
